Větrání samoobslužné restaurace

Abstract

Tato bakalářská práce se zabývá návrhem samoobslužné restaurace a jejího větrání. V teoretické části se seznámíme s oborem projektování gastro kuchyní, nalezneme zde zásady navrhování, popis technologií a zařízení, kterými jsou kuchyně vybaveny. Dále navrhneme dispoziční řešení kuchyně a vypracujeme soupis použitých zařízení. Navazující praktická část se bude zabývat větráním celého objektu restaurace.

This bachelor thesis deals with the design of self-service restaurant and its ventilation. In the theoretical part we will get acquainted with this topic. We will get familiar with the principles of design and also with the description of technologies and facilities that the kitchens are equipped with. Then we will design a kitchen disposition with a list of used equipment. The practical part will deal with a ventilation of the whole building.
