Studie proveditelnosti založení tapas restaurace

Abstract

Diplomová práce se zabývá tvorbou studie proveditelnosti v rámci projektového řízení. Hlavním cílem je vytvoření studie proveditelnosti pro projekt založení tapas restaurace v Praze. Práce je rozdělena na dvě části. První teoretická se věnuje přiblížení a vysvětlení pojmů z oblasti projektového managementu. Popisuje a definuje klíčové pojmy jako projekt, jeho životní cyklus, druhy projektů či zainteresované strany. Dále se práce věnuje jednotlivým částem studie proveditelnosti a v neposlední řadě restaurační kultuře tapas. Ve druhé praktické části je vypracována konkrétní studie proveditelnosti. Na základě šetření ze SWOT a SLEPT analýz, Porterovy analýzy pěti sil a analýzy možných rizik byla navržena vhodná strategie pro zavedení podniku Tapas Arbes. Závěrem bylo provedeno ekonomické hodnocení projektu pomocí ukazatelů NPV, IRR a posouzení z hlediska doby návratnosti investice. Přínosem diplomové práce je zhodnocení, zda je projekt založení nové restaurace vhodný k realizaci.

The master thesis deals with the creation of a feasibility study within the project management. The main objective is to create a feasibility study for the project of establishing a tapas restaurant in Prague. The thesis is divided into two parts. The first theoretical one is devoted to the introduction and explanation of the concepts in the field of project management. It describes and defines key concepts such as project, its life cycle, types of projects or stakeholders. Furthermore, the thesis discusses the individual parts of a feasibility study and last but not least the tapas restaurant culture. In the second practical part, a concrete feasibility study is developed. Based on investigations from SWOT and SLEPT analyses, Porter's five forces analysis and a potential risk analysis, a suitable strategy for the introduction of Tapas Arbes was proposed. Finally, an economic evaluation of the project has been carried out using NPV, IRR and an assessment in terms of the payback period of the investment. The contribution of the thesis is to evaluate whether the project of establishing a new restaurant is suitable for implementation.
