Startupy a zavádění inovačních IT technologií u provozovatelů restauračních služeb.

Abstract

Tato diplomová práce se zabývá analýzou implementace inovačních IT technologií v restauračních službách po roce 2016, s důrazem na její přínosy, bariéry a též vliv pandemie COVID-19. Studie se zaměřuje na klíčové faktory úspěchu při zavádění technologií, jako je elektronická evidence tržeb (EET), a implementaci rozvážkových služeb prostřednictvím aplikací, jakou je kupříkladu Wolt. Práce obsahuje finanční analýzu provozu restaurace v období 20192023 a kvalitativní výzkum provedený mezi provozovateli restaurací a odborníky z IT startupů. Zjištěné bariéry zahrnují nedostatečné školení personálu, vysoké počáteční náklady na implementaci, technologickou složitost a odpor vůči změnám. Na základě těchto zjištění jsou formulována doporučení pro efektivnější zavádění a využití IT technologií v restauračním sektoru. Studie také zdůrazňuje význam státních dotací pro přežití podniků během pandemie. Navržené směry dalšího výzkumu zahrnují rozšíření vzorku respondentů, hloubkovou studii specifických typů provozoven a dlouhodobé sledování implementace IT technologií.

This thesis focuses on the analysis of the implementation of innovative IT technologies in restaurant services since 2016, with an emphasis on the benefits, barriers, and the impact of the COVID-19 pandemic. The study examines key success factors in the adoption of technologies such as electronic sales records (EET) and delivery services through applications like Wolt. The thesis includes a financial analysis of a restaurant during the period from 2019 to 2023, and qualitative research among restaurant operators and IT startup experts. Identified barriers include insufficient staff training, high initial implementation costs, technological complexity, and resistance to change. Based on these findings, recommendations are formulated for more effective adoption and utilization of IT technologies in the restaurant sector. The study also highlights the importance of government subsidies for the survival of businesses during the pandemic. Suggested directions for further research include expanding the sample of respondents, conducting an in-depth study of specific types of establishments, and long-term monitoring of IT technology implementation.
