Abstract

Tato práce se zabývá problematikou fermentace piva a návrhem cylindro-kónického fermentačního tanku (CKT) s nepřímým chlazením. Postup návrhu se skládá z určení maximálního chladicího výkonu, zvolení vhodných kriteriálních vztahů (Nu=f(Ra...)) pro popis volné konvekce ve vertikální válcové nádobě, nalezení vhodných Nusseltových korelací pro popis nucené konvekce v trubkovém hadu. Na základě těchto vztahů proběhl návrh a konstrukce CKT, s požadovanou teplosměnnou plochou.

This thesis deals with beer fermentation and the design of cylindrical-conical fermentation tank with indirect cooling. The procedure of the design consist of the determination of maximal cooling power, selecting proper correlations (Nu=f(Ra...)) for description of the free convection in a vertical cylinder and finding adequate Nusselt's correlation for description of the forced convection in helically coiled tubes. The calculated heat transfer area was used for design of cylindro-conical fermentation tank.
