Kuchyně ve středověku a raném novověku

Abstract

Předmětem práce je výzkum středověkých a raně novověkých kuchyní. Práce zkoumá stavební podobu kuchyní, jejich umístění v rámci stavby, případně širšího areálu (hradu, tvrze, zámku, kláštera), provoz a vybavení. Zaměřuje se na následující okruhy: problematika poznání dřevěných kuchyní, účel fungování provizorních kuchyní, počet kuchyní v rámci stavby nebo areálu, rozdíly ve využívání kuchyní, které fungovaly současně v jednom sídle, rozsah a velikost zázemí kuchyní a odstraňování odpadů, podoba výlevek určených na odpadní vodu, konstrukce kuchyní a dole otevřených komínů používaných v kuchyních, zabezpečení kuchyní a existence tzv. podávacích oken, kterými se jídlo předávalo slouožícím, konstrukce a typy topenišť a úsporných kamen, využívání pecí v kuchyních, zajištění požární bezpečnosti v kuchyni. Práce vychází především z vlastních průzkumů, využívá stavebně historické růzkumy, odbornou litsesraturu, archivní a ikonografické prameny a historickou plánovou dokumentaci. Cílem práce je definování (popis, vysvětlení, formulování) vývoje kuchyní ve středověku a raném novověku, určení shod, podobnosti a rozdílnosti ve sledovaných okruzích a stanovení typických stavebních znaků, podle kterých by bylo možné identifikovat kuchyně dochované torzálně ( zříceniny, stavby se složitým stavebním vývojem). Důraz je kladený na kuchyně ve feudálním prostředí, zkoumané však jsou i kuchyně v prstředí městském, venkovském a církevním Práce se soustředí na lokality na území České republiky. Ty jsou doplněné o příklady především ze sousedních států, které leží, stejně jako Česká reublika, v chladnějších oblastech s vnitrozemským klimatem a tradicí světnic vytápěných kamny.

The subject of this thesis is the research of medieval and early modern kitchens. The thesis examines construction, the shape of the kitchens, their location within the building or wider area (castle, fortress, chateau, monastery), operation and equipment. It focuses on the following areas: the subject of knowledge of wooden kitchens, the purpose of functioning of temporary kitchens, the number of kitchens within the building or area, differences in the use of kitchens that functioned simultaneously (= operating at the same time) in one residence, the extent of the size of kitchen facilities and storage areas, the existence of kitchen wings and kitchen yards, supply of kitchens and removal of waste, shape of sinks intended for waste water, construction of kitchens and chimneys with bottom opening used in kitchens, security of kitchens and the existence of socalled delivery windows through which the food was handed over to the servants, the construction and types of stoves, including energy-saving ones , use of ovens in kitchens, ensuring fire safety in the kitchen. Thesis is primarily based on own researches, applies building historical researches (Researches and studies of the building history), technic,l literature, archival and iconographic sources and historical planning documentation (Historical plan documentation). The aim of the thesis is to define (description, explanation, formulation) development of kitchens in the Middle Ages and early modern times, determination of identities, similarities and differences in the observed areas and determination of typical building features, according to which it would be possible to identify kitchens preserved torsionally (ruins, buildings with complex construction development). The focus is on kitchens in a feudal environment, but also on kitchens in urban and rural environment and churches. The thesis is focused on locations in the Czech Republic. These are completed with examples mainly from neighboring states which, just as Czech Republic, are located in colder regions with the continental climate and the tradition of living rooms heated by stoves.
